We are hiring a general contractor; do we need to ask them for the license numbers of all sub-contractors they will be using, or do we only provide the general contractors business license number?

Only the licensed contractor (unless the State has stated otherwise?). It would be to the provider's advantage to also verify that the subcontractors are licensed, but it is not a requirement from the State.
